Equipment

Ingredients
  

  • 1 tablespoon olive oil
  • 1/2 cup diced yellow onion
  • 1 pound lean ground beef 90/10 or 93/7
  • 5 teaspoons chili powder divided
  • 2 teaspoons ground cumin divided
  • Kosher salt and freshly ground black pepper to taste
  • 1 teaspoon grated or minced garlic
  • 2 cups peeled and diced sweet potatoes about 2 medium sweet potatoes
  • 1 14.5 oz can fire roasted diced tomatoes
  • 1 4 oz can diced green chiles
  • 1/4 cup water
  • 1/2 cup shredded cheddar Colby Jack, or Pepper Jack cheese
  • Fresh cilantro for garnish (optional)
  • Avocado sliced (optional)
  • Hot honey for drizzling (optional)
  • Cottage cheese for topping (optional)

Instructions
 

  • Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and ground beef. Cook, breaking up the beef, until mostly browned.

Add seasonings:

  • Sprinkle in 3 teaspoons chili powder, 1 teaspoon cumin, salt, and pepper. Stir well. Add the garlic and cook for another minute. Remove beef mixture from the skillet and set aside.
  • Wipe out the skillet if needed, then add the diced sweet potatoes, fire roasted tomatoes, diced green chiles, water, remaining 2 teaspoons chili powder, and 1 teaspoon cumin. Stir to combine. Cover and reduce heat to simmer for about 20 minutes, until sweet potatoes are tender.
  • Return beef mixture to the skillet. Stir everything together. Taste and adjust salt and pepper as needed.

Top with cheese:

  • Sprinkle shredded cheese over the skillet, cover, and let it melt for 1–2 minutes.

Garnish and serve:

  • Serve bowls topped with fresh cilantro, sliced avocado, hot honey, or cottage cheese as desired.

Notes

For a lower-carb option, substitute sweet potatoes with cauliflower rice.
