- 1 tablespoon olive oil
- 1/2 cup diced yellow onion
- 1 pound lean ground beef 90/10 or 93/7
- 5 teaspoons chili powder divided
- 2 teaspoons ground cumin divided
- Kosher salt and freshly ground black pepper to taste
- 1 teaspoon grated or minced garlic
- 2 cups peeled and diced sweet potatoes about 2 medium sweet potatoes
- 1 14.5 oz can fire roasted diced tomatoes
- 1 4 oz can diced green chiles
- 1/4 cup water
- 1/2 cup shredded cheddar Colby Jack, or Pepper Jack cheese
- Fresh cilantro for garnish (optional)
- Avocado sliced (optional)
- Hot honey for drizzling (optional)
- Cottage cheese for topping (optional)
Add seasonings:
Sprinkle in 3 teaspoons chili powder, 1 teaspoon cumin, salt, and pepper. Stir well. Add the garlic and cook for another minute. Remove beef mixture from the skillet and set aside.
Wipe out the skillet if needed, then add the diced sweet potatoes, fire roasted tomatoes, diced green chiles, water, remaining 2 teaspoons chili powder, and 1 teaspoon cumin. Stir to combine. Cover and reduce heat to simmer for about 20 minutes, until sweet potatoes are tender.
Return beef mixture to the skillet. Stir everything together. Taste and adjust salt and pepper as needed.
For a lower-carb option, substitute sweet potatoes with cauliflower rice.
