Ingredients
  

  • 1 pound lean ground beef 90% lean
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 medium potatoes peeled and diced
  • 3 ½ cups low-sodium beef broth
  • 1 28-ounce can diced tomatoes with juices
  • 1 10.75-ounce can condensed tomato soup
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1 bay leaf
  • Salt and black pepper to taste
  • 3 cups frozen mixed vegetables or fresh vegetables of choice

Instructions
 

  • In a large pot over medium-high heat, brown the ground beef with diced onion and minced garlic until the beef is no longer pink and nicely browned. Drain excess fat if necessary.
  • Add diced potatoes, beef broth, canned diced tomatoes with their juices, tomato soup, Worcestershire sauce, Italian seasoning, bay leaf, and a pinch of salt and pepper. Stir well to combine.
  • Bring the soup to a gentle boil, then reduce the heat to low, cover, and simmer for about 10 minutes to allow the potatoes to begin softening.
  • Add the frozen mixed vegetables and continue simmering uncovered for an additional 15–20 minutes or until the potatoes and vegetables are tender.
  • Remove the bay leaf. Taste the soup and adjust seasoning with more salt and pepper if needed. Serve hot, garnished with fresh parsley if desired.

Notes

This easy ground beef soup can be customized with pasta instead of potatoes, or made low-carb by using cauliflower and zucchini.
Store leftovers in airtight containers for up to 4 days or freeze for up to 3 months.
