Ingredients
  

For the Sweet Potatoes:

  • 2 medium sweet potatoes cut into 1/2-inch cubes
  • 1 ½ tablespoons olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

For the Ground Beef:

  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 red onion diced
  • 1 tablespoon tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

For Serving:

  • ¾ cup cottage cheese
  • 1 large avocado sliced
  • Hot honey to taste
  • Red pepper flakes optional

Instructions
 

Cook Sweet Potatoes:

  • Air Fryer: Toss sweet potato cubes with 1 ½ tbsp olive oil, ½ tsp salt, and ¼ tsp black pepper. Air fry at 400°F (200°C) for 12 minutes, shaking halfway, until golden and tender.
  • Oven: Preheat to 400°F (200°C). Spread sweet potatoes on a lined baking sheet and roast for 15–20 minutes, flipping halfway.

Prepare Ground Beef:

  • Heat 1 tbsp olive oil in a large skillet over medium-high. Add ground beef, diced onion, tomato paste, chili powder, cumin, garlic powder, ½ tsp salt, and ¼ tsp black pepper.
  • Cook, breaking up the beef, until browned and cooked through (about 7 minutes).

Assemble Bowls:

  • Divide roasted sweet potatoes and ground beef into serving bowls.
  • Top each bowl with ¼ cup cottage cheese, sliced avocado, a drizzle of hot honey, and red pepper flakes if desired.
  • Serve immediately, or prep for meal prep by storing beef/sweet potatoes separate from cold toppings.

Notes

Store beef and sweet potatoes in one container, keep cottage cheese and avocado separate.
Reheat beef/sweet potatoes before serving and add fresh toppings.
Hot honey can be homemade or store-bought.
For lower carbs, use butternut squash or serve over greens.
