For the Sweet Potatoes:
- 2 medium sweet potatoes cut into 1/2-inch cubes
- 1 ½ tablespoons olive oil
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
For the Ground Beef:
- 1 tablespoon olive oil
- 1 pound lean ground beef
- 1 red onion diced
- 1 tablespoon tomato paste
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- ½ teaspoon garlic powder
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
For Serving:
- ¾ cup cottage cheese
- 1 large avocado sliced
- Hot honey to taste
- Red pepper flakes optional
Cook Sweet Potatoes:
Air Fryer: Toss sweet potato cubes with 1 ½ tbsp olive oil, ½ tsp salt, and ¼ tsp black pepper. Air fry at 400°F (200°C) for 12 minutes, shaking halfway, until golden and tender.
Oven: Preheat to 400°F (200°C). Spread sweet potatoes on a lined baking sheet and roast for 15–20 minutes, flipping halfway.
Prepare Ground Beef:
Heat 1 tbsp olive oil in a large skillet over medium-high. Add ground beef, diced onion, tomato paste, chili powder, cumin, garlic powder, ½ tsp salt, and ¼ tsp black pepper.
Cook, breaking up the beef, until browned and cooked through (about 7 minutes).
Assemble Bowls:
Divide roasted sweet potatoes and ground beef into serving bowls.
Top each bowl with ¼ cup cottage cheese, sliced avocado, a drizzle of hot honey, and red pepper flakes if desired.
Serve immediately, or prep for meal prep by storing beef/sweet potatoes separate from cold toppings.
Store beef and sweet potatoes in one container, keep cottage cheese and avocado separate.
Reheat beef/sweet potatoes before serving and add fresh toppings.
Hot honey can be homemade or store-bought.
