- 12 oz cheese tortellini fresh or frozen
- 1 cup grape tomatoes halved
- 1/2 cup whole black olives
- 1/4 cup red onion finely diced
- 1 cup mozzarella pearls
- 1/2 cup salami diced or sliced
- 1/2 cup Italian dressing store-bought or homemade
- 2 tbsp fresh parsley or basil optional, chopped
- Salt and pepper to taste
Cook the tortellini in salted boiling water until al dente (about 3–5 minutes). Drain and rinse with cold water.
In a large mixing bowl, combine cooled tortellini, tomatoes, olives, red onion, mozzarella, and salami.
Add half of the Italian dressing and toss gently to coat.
Cover and chill in the refrigerator for at least 30 minutes.
Before serving, add the remaining dressing and toss again. Adjust seasoning with salt, pepper, and fresh herbs if desired.
Serve cold and enjoy.
For vegetarian, omit salami and use extra veggies or plant-based protein.
Store leftovers in an airtight container for up to 3 days.
Add extra dressing if salad seems dry after chilling.
