Ingredients
  

  • 12 oz cheese tortellini fresh or frozen
  • 1 cup grape tomatoes halved
  • 1/2 cup whole black olives
  • 1/4 cup red onion finely diced
  • 1 cup mozzarella pearls
  • 1/2 cup salami diced or sliced
  • 1/2 cup Italian dressing store-bought or homemade
  • 2 tbsp fresh parsley or basil optional, chopped
  • Salt and pepper to taste

Instructions
 

  • Cook the tortellini in salted boiling water until al dente (about 3–5 minutes). Drain and rinse with cold water.
  • In a large mixing bowl, combine cooled tortellini, tomatoes, olives, red onion, mozzarella, and salami.
  • Add half of the Italian dressing and toss gently to coat.
  • Cover and chill in the refrigerator for at least 30 minutes.
  • Before serving, add the remaining dressing and toss again. Adjust seasoning with salt, pepper, and fresh herbs if desired.
  • Serve cold and enjoy.

Notes

For vegetarian, omit salami and use extra veggies or plant-based protein.
Store leftovers in an airtight container for up to 3 days.
Add extra dressing if salad seems dry after chilling.
